It’s that time of year when the tomatoes are plentiful and the salsa is homemade. So easy and so good. To make my version of salsa, I roughly dice a few tomatoes, a green pepper, half an onion, a bit of cilantro, and blend it all up with a squeeze of lemon or lime juice, some salt, and a bit of basil. No hot peppers for me. That’s all.
So Bill takes my salsa (or pico di gallo) to work with him last week and the amigos that work with him tried a bite of it. These are real amigos too, really from Mexico and authentic Mexican food eaters. They loved it! In fact, they told Bill that they couldn’t believe a non-Mexican had made it. I have found a new calling….
