We made peppermint bark today. But not your typical peppermint bark. This has more of a truffle-like middle layer. We also left out the peppermint extract, resulting in a lean toward the more chocolatey side. Here’s what we did:
Melt 1 package white chocolate chips. Be sure they’re really white chocolate and not candy coating or almond bark. Gross. Spread 1/2 of the melted chocolate on a piece of parchment. Sprinkle with mashed up candy canes.
Let this chill in the fridge for a few minutes. While it’s chilling, melt about 3/4 of a package of good quality dark chocolate chips and 6 Tbsp. of cream. This is not exact. You’re just making chocolate ganache, possible the most heavenly treat in the world. Stir the melted chocolate and cream until smooth and add peppermint extract (maybe 1 tsp. or so?) if you want. Let this cool for a few minutes. Be sure to stick your finger in it several times. Just to be sure it is, indeed, chocolate. Spread this chocolate over the white chocolate/candy cane layer. Throw the whole thing back into the fridge.
This layer takes a little longer to firm up. Remelt the remaining white chocolate and spread over the whole mess. Sprinkle with more candy canes. Chill until hard enough to break apart. Eat a few pieces. Store the rest in the fridge.
I don’t love typical peppermint bark, but this is good stuff. Might make a good, last-minute gift.
