Another Easy Recipe December 28, 2010

This one is courtesy of the AWFUL cold that has taken over my life. 

In a soup pot add a few tablespoons of olive oil.  Warm this up and add about 3/4 C. finely chopped onion (or a Tbsp. or so dried onion) and 1 clove garlic.  Cook until the onion is soft, about 2 minutes.

Add 4-6 Cups of chicken or veggie stock to the pot.  Bring to a boil and add 1 pkg. (more or less to suit your taste) chopped, frozen spinach, 1 can diced tomatoes with their juice, and any other seasonings that float your boat.  Boil this.

Add 2-4 Cups tortellini noodles and boil until noodles are fully cooked.  Throw a handful of parmesan on the top and voila.  That’s all.  This would be good with some diced carrots added along with the spinach.  I’ll try that next time. 

Fast, healthy, and good.  We added a loaf of crusty french bread with ours.  And a handful of cold medicine, Advil, and vitamins. 

Tonight is, as always, “Taco Tuesday.”  I love knowing what we’ll be eating every Tuesday night.  Tacos are quick to put together, everyone likes them, and there’s plenty of leftovers for lunch tomorrow.  If  some unforseen situation arises that prevents us from having tacos on Tuesday and maybe, gasp, we have to eat them on Monday, we just call that “Mexican Monday.”  Last week was really a mess and we had to eat tacos on Wednesday.  What rhymes with Wednesday?!  We titled it “World Cuisine Wednesday.”
