Warmer weather and light that stays around later in the evenings makes the perfect combination for Spring Training.  A new mitt, a new bat, two new pairs of cleats (boys sure seem to grow a lot!), and a “better” pair of practice pants are ALL on our “must have” list for this week.  Yikes!  Practice starts this week.

Jon decided to spend his day shopping (for toys) in Petersburg VA.  Specifically, he’s been coveting a particular toy tank at Toys R Us for many months and this was his opportunity to buy it.  With his own birthday money. 


Shopping makes us so tired.

Cake Thief!

 Ate lunch at Panera Bread, shopped at LOTS of places, and ended up at home for a few presents and cake.  All Jon’s choices for his birthday celebration.

After starting life as TWBE (The Worst Baby Ever), Jon has grown into such a great kid.  He has the best imagination I’ve ever witnessed in a child and it’s unbelievable how much he knows about military history.  How many kids do you know who’d rather watch history documentaries than kid movies?  We love his “costumes” and enjoy his insight to life.  Though some of us might find his passion for expression a tad bit embarrassing sometimes.  He has informed me that in 10 more years he’ll be old enough to enlist in the Marine Corps., with his parent’s signature.  Hmmm, good thing I’ve got a few years to think about that one.

Funny side note:  Bill found Jon this air gun thingy that shoots little plastic BBs.  I am not a huge fan of boys and guns, but whatever.  Before I’d let Bill give it to Jon as a present, I had to test it to be sure it couldn’t really hurt anyone.  Yes, I shot my husband with it.  And he shot me.  And then we kept shooting each other and laughing uproariously about the whole thing.

An Idea for Valentine’s Day Dessert February 11, 2011

Mix until pale and creamy (about 5 minutes):

4 eggs, 1 C. sugar, 1/4 tsp. salt, and 1 tsp. vanilla

Stir in:

4 oz. dark chocolate and 1 stick butter, melted together.

Now mix in:

1/2 C. flour, 1/2 C. cocoa, and 1/4 tsp. baking powder.

Evenly divide and spoon half the mixture into 6 ramekins (custard cups).  Add a generous spoonful of Nutella on the batter and then spoon the remaining batter on the top.  Get it?  Like the spoonful of Nutella is in the middle of a cupcake. 

While you’re preparing the cake, place a roasting pan filled with 1/2 in. of water in the oven.  Preheat to 350 degrees.  Place filled ramekins into water bath and bake for 30 minutes or until cakes have risen and tops are cracked.  Cool for five minutes.  I’m going to try to invert mine on a plate.  Will have to let you know.


Valentines in Valentines February 8, 2011

Every year since we moved to Virginia, we have mailed our Valentines from the Valentine VA post office.  It’s located about 20 miles from our house, quite close to the N. Carolina state line. 

It was windy and cold today in Valentine! Nothing here except an old general store/post office. Bus loads of people will make the trek to have their cards postmarked with the Valentine's stamp.


We’re also making pretzel dots today.  Easy and pretty cute.  Melt Hershey’s kisses on pretzels then top with an M&M.  Addictive.

Mmmmm. Finished dots. Healthy? No! Delicious? Yes!

We got really wild and tried some Reese’s Peanutbutter Cups AND Rolos too.  Oh yeah, we totally know how to get crazy here.

ETA:  Rolo dots are the best.  I had to eat three to be certain.
